weekend baking

i did some culinary experimenting this weekend, involving both homemade ice pops and delicious blueberry muffins!

i've been wanting to make popsicles for the longest time, but never realized how easy they are! now that i've seen how quick they are, i sense many batches of them in the coming weeks! i decided to start with a recipe based on my favorite fruit of summer: cantaloupe!

for the recipe, you need:

  • 2 cups ripe cantaloupe, diced
  • 3 tablespoons plain greek yogurt
  • fresh mint, chopped
  • squirt of lemon juice
  • 1 teaspoon honey
cut the melon and put it and the yogurt into a blender or food processor until smooth, then add the chopped mint and honey, and pour the mix into popsicle molds, filling them about 2/3 full. i bought the molds at world market, they have some 4th of july-themed ones for about $5.

i also made some great muffins!

for this recipe, you need:

  • 2 cups flour
  • 2 tsp baking powder
  • 3/4 tsp salt
  • 3/4 cup sugar
  • 1/2 cup butter (i used applesauce instead)
  • 2 eggs
  • 1/2 cup milk (i used almond milk- it's my new favorite!)
  • 1 cup fresh blueberries
mix the dry ingredients together, add the applesauce or butter and then the eggs and milk, and then fold in the blueberries. line a muffin pan with paper liners, and fill them about 3/4 full. cook in a 400 degree oven for 20-22 minutes. that's all!

these muffins seriously turned out so good! usually i just make the kind out of the box with the little can of blueberries inside, but the fresh ones were so juicy and delicious!
