recipes: healthy breakfast goodness

over the weekend, i decided to try out some recipes i found via pinterest. i have a hard time when it comes to breakfast- usually i just skip it altogether, sometimes i manage to get a bowl of cereal in there, but i'm always hungry way before lunchtime. so, i thought i would try out some healthy breakfast options for during the week.

i started off with this muffin recipe from martha stewart. it was easy, includes fruits and vegetables, and turned out delicious!

then i went for this slightly more adventurous option for a smoothie. i had heard of using spinach in a smoothie before, and was always skeptical, but for some reason i seem to be on some sort of vegetable/health kick so i thought i'd give it a try. i was pleasantly surprised! you really can't taste the veggies at all, and it feels so good to start the day with such good ingredients.

some other updates: i'm really enjoying the INDIE e-conference so far! since i'm a pretty new blogger, it's been so helpful to learn from all these wonderful women and to see a glimpse of fashion week!

i also went hiking in my new town for the first time today! there are lots of beautiful trails here, and i think this will be a great new hobby for me!

and on a more frustrating note, i still seem to be having account/posting issues. whenever i try to post pictures from flickr, it displays the html code instead of the picture itself. the pictures in this post i just uploaded directly from my computer, which seems to be the only other option. has anyone ever experienced this issue before?

  1. I always have good intentions when it comes to breakfast, but end up with a granola bar and a cup of coffee most days. Making muffins ahead of time is a good idea, since I don't have much ambition in the morning, hehe.
I'm doing the Indie e-conference too. I'm enjoying it so far, especially participating in the chat. They said they are going to compile a list of everyones blog so we can all network better, so yay for new blogs to read!

  5. Hey Ellie! Agreed - INDIE was amazing. So much to learn and so many new blogs to explore. I'm thrilled you found my blog there and that I've found yours now! I need to head back over and catch up on the links that have been posted the past couple of days. Also, thanks for the recipe! I am always looking for things I can make over the weekend for a grab & go breakfast during the week and this looks perfect. Happy Thursday! xoxo Kristin
